Crab lollipop

Ingredients 
  • Crab meat 1 cup
  • Red chilli powder 1 tsp
  • Lemon juice 1/2 tsp
  • All purpose flour 1/4 cup – maida
  • Water 1/2
  • Pepper 1tsp
  • Red food color (optional)
  • Salt to taste
  • Oil 1 cup
To grind
  • Small onion 10 nos
  • Ginger 1/2 inch
  • garlic 6 cloves
Method
Wash the crab thoroughly and steam it for 10 min.
Let it to cool down and then remove the shell to spoon out the crab meat.
Discard the shells and retain the legs.
Meanwhile, make a paste of the ‘to grind’ ingredients.
Add ground paste, chilli powder, lemon juice and salt to the crab meat and mix well.
In a bowl, add the flour, pepper, salt, food color and water to make a semi liquid batter.
To make the lollipops, take a leg of the crab and make lemon sized balls of the crab meat mix at the tip of the leg.
Meantime, heat the oil for frying.
Dip just the meat part of the lollipops in the batter and fry it in the oil, once the oil is hot.

Tips
If the crab mix is too wet to make balls you can add some flour to the mixture to get hold of it.
Shallow fry is preferable to avoid the legs from frying.
