Elaneer Payasam (Tender coconut kheer)

Ingredients

  • Tender coconut pulp ½ cup
  • Coconut water ¾ cup
  • Thick coconut milk ½ cup
  • Full fat milk 1 ½ cup
  • Sweetened condensed milk 3 tbsp
  • Cardamom powder a pinch

Method

Boil milk and simmer until it reduces half in quantity. Meantime puree coconut pulp and coconut water in a blender.

Now, add the condensed milk to the boiling milk and stir it for another 5 mins. Then switch off and let it cool completely.

Finally add the puree, coconut milk and cardamom powder to the milk.

Serve chilled!


Tips

  • Use soft and pulpy tender coconut
  • 2 or 3 tender coconut required for this recipe.
